I don’t know about you, but I’ve been feeling burned out lately. Everything from the state of the world and how COVID has affected it to trying to figure out what to make for dinner. I’ve gotten so used to certain recipes, and honestly, I’m getting tired of making the same thing over and over again.
So, I’ve been flipping through cookbooks (new and old), going to Pinterest for inspiration, checking out recipes on foodnetwork.com, and doing a quick Google search for recipes. I’ve found some winners, including a veggie stir fry from Ree Drummond (aka the Pioneer Woman), an avocado Caprese salad, and others. I’m dying to make a chicken meatball parmesan recipe that I found. Sometime soon, I’ll give it a shot.
Many times, when I’m looking for dinner inspiration, it’s because I have food in the pantry or freezer that needs to be eaten. And also, because I don’t know what else to do with those ingredients. Case in point, I have a few cans of chickpeas. I love hummus and falafel, but I know there’s more I can do with that legume. I’ve found many recipes that pair well with chickpeas, including quinoa. Then, before I know it, I’m looking up other recipes with quinoa. It feels like going down a rabbit hole sometimes.
What Are Your Dinner Inspirations?
What are you doing for dinner inspirations? I’m sure that you’re probably like me and driving yourself mad trying to find something new for either you or your family. If it’s family, it can be even more frustrating finding something the kids will eat. I have a picky eater, and he will only willingly eat certain things. None of those are things I personally cook. But he’s four years old, and one day his palate will expand, and he can discover wonderful foods. Well, I hope he explores new foods when he’s older anyways.
Do you have any recipes that are great for the family and that your kids happily devour? Is there a secret to it that I’m not aware of?
